These trucks have seized on the consumer’s need for convenient, high quality meals. Hence, they are posing a major competitive threat to vending and onsite foodservice companies.
This trend is occurring after vending operators have largely retreated from the food business by pulling food machines from locations. Some vending operators have re-entered the food business recently by expanding into self checkout micro markets. The economics of operating food vending machines and self checkout micro markets are more challenging than ever.
